Alex Vazquez · Founder

CoquiEats is deeply personal to me. My parents were first-generation Puerto Ricans who left the island and came to Camden, New Jersey in search of a better life. Like many families starting over, all we really had was each other, our culture, and the traditions we carried with us from home.

Growing up, my mother's cooking was at the center of everything. Her recipes brought comfort, kept our Puerto Rican roots alive, and brought our family together. Those meals were more than food; they were a connection to where we come from and a reminder of the love, sacrifice, and resilience that shaped our family.

I created CoquiEats to honor that journey and share my mother's amazing recipes with the city that helped raise me. Being in the heart of Camden means everything to me because this is home. Through CoquiEats, I want to bring authentic Puerto Rican flavors, culture, and energy to my community while celebrating the traditions that were passed down to me.

For me, CoquiEats is more than a food truck. It is family, culture, and pride, served one meal at a time.

Alex founded CoquiEats to bring the flavors of Puerto Rico to the streets of Camden. He built the business from the window of a food truck, neighborhood by neighborhood, always focused on creating opportunities for the next generation.
